Can you tell I have a lot of couscous in the pantry that I'm trying to use up? 🙂
This was a super late, super quick meal I brought together after a super long day. I realize the idea is not that different then yesterdays One Pot Chicken with Mango and Couscous but I thought I'd share anyway and show you how versatile this type of dish is.
The formula is simple... especially for 1 serving... 3-4 ounces of your favorite protein. Brown it. Add some flavorful liquid (juice or broth about ¼ cup) and any spices you like. Bring to a boil. Add the couscous (¼ cup). Cover, remove from heat. wait 5 minutes and eat! Of course if you have fresh veggies add them too! I'm just all out. 🙁
Seriously... how simple is that? Here's the flavor combo I put together tonight.
Ingredients
- 4 oz raw boneless chicken breast
- 1 medium orange juiced (or about ¼ cup orange juice)
- 1 teaspoon soy sauce
- ¼ teaspoon ground ginger
- ¼ cup Whole Wheat Couscous
(55g)
Instructions
Brown the chicken in a small pot with a bit of non-stick cooking spray. Juice the orange and add it to the pot along with the soy sauce and ginger. Bring to a boil, add the couscous, cover and remove from the heat.
Wait 5 minutes then enjoy!

Amy - Totally NOT a silly question. The couscous does go in dry and then it soaks up the liquid. I should have been more clear.

This might be a silly question but I was just wondering (because I've never made couscous before) do you cook the couscous separate before adding it to the recipe, or just throw it in the pan dry?

Bev - I have only ever made whole grain. 🙂 It's the same as regular pasta vs whole wheat. As in regular couscous is made from stripped flour and whole grain couscous is made from 100% whole grain flour. Either is fine I just choose whole grain whenever possible.

Ok, this one is a keeper! Question, I've used couscous before but I don't believe it was "whole wheat"? Is there a difference? Taste difference? Point difference? etc? This is not only so easy but soooo delish sounding! I cannot wait to shop so I can get the stuff to do it!

I have been so inspired by your couscous recipes last night I tried one of my own. I prepared as you do, but I used chicken, roasted red cherry tomatoes (that I roasted myself) and low fat feta cheese, I used greek seasoning and chicken stock for the couscous and flavoring on the chicken. I topped it with a little fresh greek oregano and had a side of home made pita chips with it, it was yummy! Thanks for the inspiration! Now I'm excited to play with couscous again! 🙂
