I made Turkey Salisbury Steak. Sacrilege, I know. But, you most likely won’t even notice because I made these the very same way I would do a regular beef Salisbury steak. Just as delicious with less fat and calories than the beef version. Who knows, you might even like this better than the original!

What is Salisbury Steak?

Salisbury Steak is one of those classic American TV dinners made from ground beef, onion and bread crumbs, formed into patties and cooked in a brown gravy. Mushrooms are traditionally added in as well.I decided to try and make this classic meal into a healthier version without compromising the flavor that we all know and love. Enter ground turkey! This version is every bit as good as the original, but with less fat and calories, the entire family will love.

Main Ingredients Needed

You’re going to need a lot of the same ingredients needed for a traditional Salisbury Steak Recipe minus the beef! Here’s what you’ll need:

  • ground turkey breast– the main ingredient here.
  • egg– binds all the ingredients together.
  • bread crumbs– you can use plain, Italian or panko breadcrumbs.
  • ketchup– adds flavor and color. Tomato paste is a good substitute.
  • garlic salt– for flavor seasoning.
  • ground mustard– an aromatic spice to add a little tangy profile.
  • salt & black pepper– seasoning while you go is essential for flavor, so don’t skip out on these two.
  • olive oil– to cook the onions and steaks.
  • onion– adds some subtle onion flavor. Don’t worry if you don’t like onions; you’ll barely notice them.
  • sliced mushrooms– the earthy flavor really lends itself to the gravy mix and is the perfect addition to Salisbury steak. If mushrooms aren’t your thing, omit them.
  • butter– to add flavor and to sauté the mushrooms.
  • all-purpose flour-thickens the gravy. Corn starch is a good substitute.
  • beef broth– contains beef flavor making the gravy really full of flavor. Can also use beef stock as a substitute.
  • Worcestershire sauce– adds savory flavor and moisture.

In a large bowl, combine ground turkey, egg, breadcrumbs, half the diced onion, ketchup and spices together until combined. Form 6-7 patties.

Brown the Turkey Patties

In a deep large skillet on medium-high heat, brown both sides of the patties in 1 tablespoons olive oil. Remove from pan and set aside. Patties will not be cooked completely at this point and that’s totally ok!

Sauté Mushrooms and Onions

Pour in remaining 1 tablespoon of olive oil into skillet. Sauté the mushrooms and last of the onions until browned and tender, about 3-4 minutes. Remove from pan and set aside.

Make a Roux

Melt a tablespoon of butter into pan over medium heat. Sprinkle in flour and whisk to form a paste. It might seem to form crumbs because it’s a little dry; that’s ok!

Whisk in Beef Broth

Slowly whisk in beef broth to avoid lumps. Bring gravy to boil to thicken, then reduce heat to simmer. Pour in Worcestershire sauce.

Slide in the browned partially cooked meat patties and spoon sauce over to coat. Add in cooked mushrooms and onions overtop and cover. Simmer 10 minutes or until gravy thickens even more and turkey steaks and cooked thoroughly. Serve hot along with plenty of gravy.

My family loved this delicious meal! I served this over riced cauliflower, but traditional mashed potatoes would probably be even better. Here are a couple of other tasty ideas:

  • Famous Butter Rice or Brown Rice- another healthier option.

How thick should I be making the patties?

Your steaks’ thickness determines how long cooking them takes. Aim for no more than 1 inch thick.

Why does Salisbury Steak fall apart?

The two main reasons Salisbury Steaks don’t hold their shape are:
They aren’t formed welland/or,
They’ve been overcooked.
If the patties aren’t staying together or firm enough, consider adding another egg. Freezing them for 10 minutes before pan-searing will also help them hold their shape.

Ingredients

  • 1 1/2 lbs ground turkey
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tbsp ketchup
  • 1 tsp garlic salt
  • 1 tsp ground mustard
  • salt & pepper to taste
  • 2 tbsp olive oil divided
  • 1/2 cup diced onion divided
  • 8 oz sliced mushrooms
  • 1 tbsp butter
  • 1 tbsp all purpose flour heaping tablespoon
  • 2 cups beef broth
  • dash Worcestershire

Instructions
