An Easy Thai Red Curry Sauce

I love Mae Ploy curry pastes. They are really easy to use and very inexpensive. You can find them in most Asian grocery stores but you can also find them online.

For this low carb Thai curry sauce I used Mae Ploy curry paste, Swerve Brown Sugar sweetener and coconut milk. That’s all. Then for the dish I added some low carb vegetables like broccoli, peppers and mushrooms and then some cilantro at the end for a garnish.

Let’s Make Some Thai Curry Meatballs!

For the meatballs the first time I used ground beef, garlic and ginger. However they were a bit dry so the next time I used ½ ground beef and ½ ground pork. Just mix all of that together to make your meatballs.

Brown them a little and take them out of the pan to make the sauce. For the coconut curry sauce you just whisk together the Mae Ploy curry paste, Swerve brown sugar sweetener and a can of coconut milk. Let that simmer for a minute to dissolve the brown sugar.

This sauce is a bit spicy so start with 2 tablespoons of the curry paste, make the sauce and taste it. Then add more if you want. I used 3 tablespoons because we like it spicy!

Add in the veggies and let them cook for a minute or two. Place the meatballs in the pan, cover and cook for 5 minutes. That’s all folks!

You can eat these curried meatballs as is or you can eat them over cauliflower rice or even veggie noodles.

Recipe Tips And Notes

  • I used beef and pork for the meatballs but this would be just as good with ground chicken or turkey. They might be a bit dry but the spicy sauce works well with them.
  • I used Mae Ploy curry paste but you can also try Thai Kitchen red curry paste or another Thai curry paste that you find in the grocery store. I bought Mae Ploy at an Asian store for a couple dollars and it lasts forever.
  • I used 3 tablespoons of the curry paste and it was spicy. The coconut milk tones it down but if you are not a spicy person you might want to start with 1 or 2 tablespoons, mix it up and then add more.
  • I used Swerve Brown sugar sweetener for this dish but you can use another kind of brown sugar substitute like Lakanto golden. You could also use regular Swerve if you want but I like the brown sugar flavor in this dish.
  • This went great over cauliflower rice. You can also try veggie noodles.

FAQs

What is the secret to Thai curry? ›

The secret to making amazing Thai curries is to use plenty of aromatics, like onion, ginger and garlic. Choose full-fat coconut milk for its richness (you won't regret it!). Stirring in just a little bit of rice vinegar and sugar adds tons of complexity.

Does Thai curry have carbs? ›

Traditional Thai curry sauce recipes incorporate canned coconut milk. While canned coconut is delicious, has great flavors and offers healthy fats, it's also higher in carbs. Depending on the brand of canned coconut milk, carbs can be as high as 14 per can, which is quite a bit if you're following a lower carb diet.

Thai Dishes You Can Enjoy

Many appetizers — like lettuce wraps, for example — are OK on the keto diet with some minor adjustments, or curries with a few vegetable substitutes make for a great meal.

Adding a pinch of sugar or ketchup can counteract the spiciness. Starchy foods like potatoes or rice can absorb heat. Acidic ingredients like lemon juice, lime juice, or vinegar can cut through the spiciness.

What can I add to Thai curry to make it taste better? ›

Add in more dried spices.

Nearly all the Central Thai curry pastes call for a small amount of white pepper, cumin and coriander seeds. To my taste, the aroma from these spices are among the first I notice when I eat green, masaman or panang curry.

How do Thai restaurants make curry so creamy? ›

Often, Thai curries are made using coconut milk as the main liquid, which results in a creamy consistency. You can use as much or as little coconut milk as you wish based on your preference for texture, spice, and flavor.

Coconut milk or cream

Coconut milk is a vegan option for all curries. You can also try adding a splash of milk, if that's all you have to hand. Milk contains a protein called casein which actually breaks down capsaicin and makes it less spicy – both full-fat and skimmed do the trick nicely.

What type of cream for curry? ›

Clotted cream is amazing and it doesn't just have to be used on scones! By adding it to this curry it gives it that nice creamy flavour, but I do find it very subtle so its not over powering. Funny enough it makes it almost taste like a korma but has more of a tomato flavour than coconut.

What yogurt to use in curry? ›

Yogurt should be thick Greek yogurt which is not very sour. If you are not sure about yogurt use or afraid it will curdle.. Use half yogurt and half cream and mix it in last step after the curry is ready.

What gives Thai curry its Flavour? ›

Shrimp paste gives Thai curry pastes a distinctive, authentically Thai flavor. It's also a source of “umami” that adds depth to the curries the paste is used in. It should always be roasted for a few minutes before being added to the curry paste.

What makes Thai curry so good? ›
