Do you love cherry limeade? Do you ever wish you could turn your cherry limeade into a popsicle? Not just any popsicle, of course. Not a hard popsicle but the type of popsicle that is soft and easy to suck pieces off of.

Not only is this popsicle recipe the answer all your cherry limeade popsicle dreams, but it has a secret ingredient: zucchini! I know, I know. It sounds weird. But TRUST ME. This recipe won an award in a summer dessert cooking competition in 2014 when it was up against all kinds of things that didn't have weird vegetables in it. This recipe is GOOD.

How to sneak zucchini into your kids

So why did I put zucchini in it?Texture, my friends. If you are like me, your favorite popsicles growing up were the ones where the ice was just a little bit soft and mushy instead of hard like a big flavored ice cube. That texture is achieved commercially with a variety of less-than-savory products like corn starch and corn syrup (ew). But you can duplicate that texture at home with zucchini - without any weird flavors - promise! And it's a great way to get your kids to eat zucchini without complaining. Awesome!

Keto and paleo sweeteners vs sugar

This recipe is full of healthy, whole foods like cherries, zucchini and limes. Since limes are quite tart, most people are going to want to sweeten this recipe somehow. If you are keto, use monkfruit extract or erythritol. If you are paleo, honey, maple syrup or coconut sugar are great! Not sure what all these weird sweeteners are? You could use 1/4 cup or regular sugar, too.

Ingredients

  • 1/2 of a medium sized zucchini*
  • 10 cherries* (fresh or frozen - the dark red kind)
  • Juice of 1 1/2 limes
  • 1/4 cupmonkfruit sweeteneror other sweetener of choice
  • 1/2 cup warm water

*Creative Green Living recommends purchasing organic options for these ingredients to avoid GMOs and persistent pesticides.

Keto and low carb friends: When made with a keto sweetener like monkfruit extract, the popsicles have 9.5 net carbs each when you use this recipe to make 4 popsicles when you subtract fiber and half the sugar alcohol

  • Remove the stem and/or blossom ends from the zucchini and cut into about 8 pieces. Add to blender.
  • Pit cherries and remove stems if needed. Add cherries and lime juice to blender.
  • Mix the sugar and water, stirring until dissolved.
  • Add the sugar water to the blender and blend about 1 minute or until smooth.
  • Pour mixture into popsicle molds and freeze until solid. Alternatively, you could pour the mixture into an ice cream makerto turn it into a tasty sorbet instead.
